Potato Pancakes with Cheese and Bacon
The ultimate light lunch or supper dish, these are so delicious.They are potato drop scones, topped with a thick layer of melted Irish Cheddar cheese and finished with rashers of crisp, streaky Irish bacon…
First make the pancakes. Place the mashed potato into a bowl and add the milk, eggs and flour. Season. Beat until you have a thick but pourable batter.
Heat the oil in a heavy bottomed pan. Pour in a ladleful of the batter mix and cook until browned underneath. Flip over and cook on the other side. Transfer to a warmed platter and reserve, keeping the pancakes warm.
At the same time cook the streaky rashers in a non-stick pan to crisp in their own fat. Blot on kitchen paper.
Top the potato pancakes with slices of cheese and place under a hot grill to melt the cheese. Serve with crisp bacon rashers on top.
